Ingredients
1/2 pound cleaned and scored squid
1 t soy sauce
2 T ketchup
1 t sugar
1 small clove garlic, minced
1 slice of ginger, minced
1 sprig of green onion, cut into 2 in strips
1 cup of zucchini
1/4 red bell pepper
pinch of salt to taste
1. Boil water and quickly blanch the squid.
2. Heat up a saute pan with 2 t of oil. Fry the garlic and ginger until aromatic.
3. Put the vegetables in and stir fry until semi-soft. Add ketchup, soy sauce, sugar, and salt. Stir for about 30 seconds.
4. Add the calimari and the green onion and stir for about 1 minute, until everything is nice and hot.
5. Serve with rice or noodles.
