I got some squid from the grocery store and decided to make a calamari stir fry with it. My mom suggested that I did a ketchup based sweet and sour sauce. The squid that I used were very tiny. When I first blanched them, they shrank to about half their original size. Not quite sure what I did wrong, but the calamari came out to be very chewy...something I don't mind, but I want to know how to cook it right. This will make 1 serving.
Ingredients
1/2 pound cleaned and scored squid
1 t soy sauce
2 T ketchup
1 t sugar
1 small clove garlic, minced
1 slice of ginger, minced
1 sprig of green onion, cut into 2 in strips
1 cup of zucchini
1/4 red bell pepper
pinch of salt to taste
1. Boil water and quickly blanch the squid.
2. Heat up a saute pan with 2 t of oil. Fry the garlic and ginger until aromatic.
3. Put the vegetables in and stir fry until semi-soft. Add ketchup, soy sauce, sugar, and salt. Stir for about 30 seconds.
4. Add the calimari and the green onion and stir for about 1 minute, until everything is nice and hot.
5. Serve with rice or noodles.
