I recently remembered about the bananas that I bought a week ago that was sitting on the corner shelf. When I discovered their state of ripeness, I found that they were in perfect condition to make banana bread. I've made traditional banana bread several times and today, I am going to try to utilize one of my favorite flavor combinations: peanut butter and banana. Since temps have reached over 100 degrees these past few days, I thought that I would make it easier for my AC unit and use the toaster oven to bake this loaf. I have a convection taster oven, so uneven heating shouldn't be a problem. However, 10 minutes into the baking, I found that the top was a bit brown, so I laid a sheet of aluminum foil on top of the pan to shield the direct radiation a bit. When the timer was up, I just left the loaf in the oven to continue cooking. I've read that the center of loafs don't cook very well in the toaster oven.
Ingredients
1 stick of butter
1 cup of brown sugar
2 eggs
4 bananas, mashed
1 cup of AP flour
1/2 cup of whole wheat pastry flour
1 t baking soda
1/2 t salt
1/2 vanilla
1/4 c peanut butter chips
1/3 c peanut butter
Preheat the oven to 350 degrees F
1. Cream together the butter and sugar.
2. Add eggs, bananas, and vanilla. THen, combine well.
3. In a separate bowl, sift or mix the flours, baking soda and salt.
4. Slowly incorporate into the creamed mixture.
5. Pour half into a greased and floured loaf pan.
6. Add the peanut butter and peanut butter chips to the remaining of the batter and mix.
7. Pour the rest of the batter into the pan and with a fork, swirl the batter.
8. Sprinkle the top of the batter with some brown sugar.
8. Bake for about an hour.
