Pancake Ingredients
- 3/4 cup quick-cooking oats (food processed)
- 1 1/2 cups milk
- 2 T vinegar
- 3/4 cup whole-wheat flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/8 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 2 tablespoons unsalted butter, melted
- 1 tablespoon packed brown sugar
2. Mix all the dry ingredients together in a mixing bowl. Then add the egg and milk. You may want to reserve some of the milk mixture, (so batter does not become too watery). If the batter is still a bit stiff, add some milk.
3. Melt some butter on a griddle, (this gives it a delicious texture) and cook these babies like you would any other pancake.
Apple Maple syrup
2 diced apples
1/4 c brown sugar
1/4 c apple jacks liquor
1/4 c maple syrup
1 t butter
1. Melt the butter in a saute pan and add the apples.
2. Add the apple jacks and allow the mixture to boil.
2. Add the brown sugar to the apples and stir until the sugar just starts to melt.
3. Add the maple syrup and allow the sauce to cook down for about 5 minutes.
