This is one of my favorite dishes to get at the local Thai restaurant. Traditionally, it's made with Chinese broccoli, but since I only had Chinese spinach on hand, that's what I used instead. My recipe calls for fish sauce...yeah, it smells as bad as it sounds, but in small amounts it gives your dish an extra flavor dimension. It's optional, if you don't have it, don't worry about it.
Ingredients
1 package of thick rice noodles (see my note in "WIT?") room temp
1 small bundle of green leafy vegetable
1 egg
1 clove of garlic, minced
1 cup of fried tofu (or any other stir-fried meat)
2 T soy sauce
2 t sugar
1 T hoisin sauce
(optional) 1 T oyster sauce
2 dashes of fish sauce (1/4 t)
1. In a nonstick pan, heat up about 1 t of oil. Add the garlic and wait until lightly brown. Add the egg and scramble in the pan. Add the stems of the leafy vegetable and cook for about 1 minute. Then add the leaves and cook until the leaves are just slightly wilted. Remove everything from the pan and set aside.
2. Add another t of oil in the pan and add the noodles, and the sauces, including the sugar. Stir the mixture thoroughly, try to separate the noodles as well as possible.
3. Once the noodles are heated, add the first mixture of vegetables and egg along with the fried tofu. Stir fry everything for about 1 minute longer and serve.
