We had some left over mashed potatoes from Thanksgiving so I decided to make a shepherd's pie. I accidentally made it with the potatoes on the bottom layer
Ingredients:
4 cups of left over mashed potatoes
.75 pound of ground beef
1/2 onion diced
1/2 diced bell pepper
1/2 can corn
1/2 c peas
1/4 c raisins
1/8 c chopped olives
1 cup spaghetti sauce
1 cup shredded cheese
1. Brown the beef in a skillet and drain the juices. Set the meat aside.
2. Saute the diced onions until translucent. Add the pepper, meat, raisins, olives and spaghetti sauce. Simmer for about 5 minutes. Add salt and pepper to taste.
3. Add the frozen peas and drained corn to the mixture.
4. Place all of the contents in a casserole dish and top with mashed potatoes and sprinkle the top with cheese.
5. Bake 350 degrees F for about 20 minutes (until cheese is melted and bubbly)
