This was surprisingly so easy to make and so delicious. I think this could easily serve 3-4 people, but Steve and I skimped on the pasta gobbled this up. I served it with a side of wilted spinach and topped the mussels with freshly grated Parmesan cheese.
Ingredients:
2 pounds of mussels
1 can of tomatoes crushed
3 cloves of garlic
1/2 onion diced
2 T fresh oregano
1 t driIed basil (My basil isn't full grown yet, so I used dried)
3 T marsala wine
Pasta 2-3 servings
1. In a sauce pan, pour about 2 t of olive oil in the pan. Add the garlic and onion and cook until translucent.
2. Add the spices and the crushed tomatoes. Simmer for about 20 minutes.
3. Meanwhile, rinse and scrub the mussels. Be sure to pull of any "beards" that are sticking out of the shell and throw away any shells that are opened.
3. Salt your sauce to taste. Add the marsala wine to the sauce, pour the mussels over the sauce and put a cover on the pan. Allow the mussels to steam for about 5-6 minutes (until all the shells have opened).
4. Plate and serve with some crusty bread.
I am pretty sure you can make this even easier by using a jar of store bought sauce. Just heat the sauce to a boil, add the wine and allow the mussels to steam.
