This is a common lunch served in Taiwan. Traditionally, a spaghetti type noodle is used, but today, I cooked up some soba noodles instead. Soba noodles are Japanese buckwheat noodles that seem to hold the sauce really well. The dish is also traditionally served with shredded cucumbers, carrots, and chicken. I had a piece of fried chicken left over from dinner 2 nights ago, so I used that instead. This is a true 30 min. or less meal. It's so easy and serves 4.
Ingredients
3 bunches of soba noodles (you can also use spaghetti)
75 g peanut butter
2 T soy sauce (to taste)
1 T sesame oil
1 clove of garlic
water (to thin out sauce)
1 cooked chicken breast, shredded
1/2 cucumber cut into matchsticks.
5 baby carrots, cut into matchsticks.
1. Cook the noodles according to the package and rinse with cold water when finished. Allow to cool before serving.
2. In a food processor or blender, blend the garlic, peanut butter, sesame oil, and soy sauce together. Add enough water so that the consistency of the sauce is like salad dressing.
3. To plate, place a serving of pasta on a plate, place about a handful of the carrot, cucumber and chicken on top of the noodles. Drizzle the pile of food with the peanut sauce.
4. Traditionally, people like to add hot sauce, rice vinegar, or additional soy sauce. You may want to have those condiments readily available and allow the eaters to add what they want.
You can easily make this vegetarian by omitting the chicken.
