The recipe below will make 2 round 8 inch cakes. I actually made 2 flavors of cake balls, one with each of the round cakes: lemon and peanut butter chocolate. I made the batter, divided it into 2 equal portions, added a little something to each of the batter to make them taste a bit more like their final product, baked the cake, and proceeded to make cake balls with frosting and chocolate/vanilla bark. I will include the recipe that I used to make the cake and the 2 types of frosting.
Makes about 60 1.5 in diameter cake balls.
Cake Ingredients
4 oz avocado
1 oz butter or margarine
1 oz olive oil
1 cup milk
4 eggs
1 t vanilla
1.25 cup sugar
2 cups whole wheat cake flour
1/4 c AP flour
4 t baking powder
1 t salt
extra flavoring for peanut butter cake (2 T PB2 powder and 1 t almond extract)
extra flavoring for lemon cake (2 packets of crystalized lemon, 1 t lemon extract)
Procedure
1. Mash the avocado, and mix with the butter or margarine until smooth. Add the olive oil, milk, eggs, vanilla, and sugar. Mix on medium until everything is well mixed. (a few lumps are ok).
2. In a separate bowl, mix the dry ingredients. Slowly incorporate the dry ingredients with the wet ingredients.
3. Divide the batter into 2. Add additional flavorings to the batter to make the flavor a bit more unique. For a vanilla cake, just add 1 t vanilla.
4. Pour into 2-8 in round pans and bake the cakes at 345 degrees for 30-35 minutes.
Lemon Avocado Frosting
44 g avocado (1.5 avocados)
36 g spreadable margarine
1 package of crystalized lemon
powdered sugar
Peanut Butter Frosting
4 T butter
4 T PB2 (powdered peanut butter)
1/4 t salt
powdered sugar
1 T milk
1. To make the frosting, combine all the ingredients except for the powdered sugar. (Be sure not to over beat the butter). Add the powdered sugar slowly until you get the right consistency for frosting.
To make the balls, crumble the cake finely in a food processor, mix the cake with the frosting, and form balls. Place the balls in the refrigerator for about an hour. Dip each ball in melted chocolate bark or vanilla bark. Top with piped chocolate, sprinkles, lemon zest, or sea salt. You can find a more detailed procedure under boozy bailey's cake balls.
