Our friend Hope invited us over for dinner and was serving a baked salmon, which turned out soo yummy. So I decided to bring a citrus-y quinoa salad to complement the fish. I'd say it turned out pretty well. Oh, did I mention that this dish has like a bunch of "superfoods?" It's colorful, delicious, and nutritious. This recipe will serve 4 people as a side.
Ingredients:
1 cup of quinoa cooked according to instructions (but with chicken stock instead of water)
1/2 c edamame, shelled
1/2 red pepper, diced
1/4 c dried cranberries
4 dried apricots, diced
4 basil leaves, chopped finely
1 T garlic infused olive oil
1 T lemon juice
1 T orange juice
1. I used my rice cooker to cook the quinoa. I like to use low sodium chicken broth to cook it because it gives it more flavor and I don't have to add additional salt. After cooking, I used a fork to fluff it up and set it aside to cool. Meanwhile, I cooked the edamame and popped the pods out of the shells and set those aside.
2. Mix the olive oil and juices together to make a dressing and set that aside. I used garlic infused olive oil because I had that and wanted to try it out. It turned out pretty good.
3. When the quinoa has cooled down a bit, combine all the ingredients together and enjoy.
