Ok, Ok, why did I have to ruin chocolate cake with zucchini and carrots? Well, why not?
The cupcakes by themselves weigh in at about 183 calories and takes care of about 20% of your vitamin A needs. I looked up and an average cupcake has about 200 calories so I guess you can say that my cupcakes are 10% less calories.
The cream cheese frosting that I normally use tacks on another 100 calories. The cupcake pictured above is a cowboy themed cupcake with salted caramel "hay," caramel cowboy hat, and fruit roll up bandana. Who knows how many calories those tack on. Well, here's the recipe to make 24 cupcakes. (The frosting recipe is my usual cream cheese frosting recipe)
Ingredients
1 cup unsalted butter
1.5 cup sugar
2 eggs
1 t vanilla
2.5 cups all purpose flour
3/4 cup cocoa powder
1 t baking powder
1 t baking soda
3/4 t kosher salt
1/2 cup plain nonfat yogurt
2 zucchinis
1 handful of baby carrots
Procedure:
Preheat oven 350 degrees F.
1. Use a food processor to finely mince the carrots and zucchini. I ended up with 400 g of the vegetable mixture. Set aside.
2. In a medium sized mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. In a mixer, cream the butter and sugar together. Add the eggs one at a time and then stir in the vanilla. Pour in half of the dry mixture and mix until incorporated. Add half of the yogurt and half of the left over dry mixture. Mix until incorporated. Finally, add the rest of the dry mixture and yogurt until you have a pasty batter.
4. Fold in the vegetable mixture and your batter will become thinner.
5. Use an ice cream scoop to fill your lined cupcake pan. I found that 1 scoop per cupcake worked out perfectly.
6. Bake for 18-22 minutes. Allow the cakes to cool and frost. Enjoy.

I'm thinking that the frosting and toppings will make up for the lack of sweetness. If you want to add a bit more sugar to make the cake sweeter, you can probably add another 1/4 cup of sugar.
