Cold dishes are very common appetizers that people have before a Chinese dinner. Here's a super easy no cook dish that you can make. I used a medium sized potato from my weekly CSA box. I'm pretty sure you can use any type of potato: yukon gold, russett, red; although, a less starchy potato will work best. Don't let raw potato scare you, the secret to making them taste crunchy and not starchy is soaking. You want to soak your potatoes for about 10 minutes at first, rinse, and soak in fresh water for another 20 minutes. The more you soak, the less starchy/gritty tasting they will be. I think they end up tasting like mild carrots.
This recipe will serve 2 people as an appetizer/side dish.
Ingredients
1 medium potato
1 clove of garlic, minced
1 t soy sauce
2 t rice vinegar
1/3 t sugar
splash of sesame oil
salt to taste
green onion
Procedure
1. Peel the potato and juliann really thinly. You could use a grater, but I think that would make the potatoes more mushy. Just slice the potatoes really thin to make chips and then slice them cross ways to make strips.
2. Soak them in water for about 10 minutes. Rinse. Repeat as many times as you can. 4 times is enough.
3. Combine the potatoes, garlic, soy sauce, vinegar, sugar, sesame oil and salt. Mix and let the mixture sit in the fridge for at least 20 minutes.
4. Garnish with some sliced green onion and enjoy.
