This recipe is based off one of my favorite fancy dishes from Taiwan, shrimp lettuce wraps. But since Steve is allergic to shrimp and fried doughnut sticks (crispy component) is kind of hard to procure here in Austin, here is my rendition of chicken lettuce wraps. This recipe will serve 3-4 people.
250 grams of cubed raw chicken, or diced shrimp
1/8 t salt
1/2 T wine
1/2 T cornstarch
Optional: 2 T seseme ginger salad dressing (I had that and decided to throw it in)
1/3 onion diced
4 water chestnuts, peeled and diced into small cubes
6-7 mushrooms ( I used button and shitake mixture)
1 ear of corn (1/2 can corn)
1/2 T soy sauce
1/4 t salt
dash of white pepper
crushed potato chips (1 cup or more)
Lettuce
1. Marinate the chicken with the salt, wine and cornstarch (and dressing) for about 20 minutes.
2. In a hot saute pan, add about 2-3 t of cooking oil and stir fry the onion, water chestnuts and mushrooms for about 3 minutes.
3. Add the soy sauce, salt and white pepper to the mixture and stir until evenly distributed. Add the corn and stir fry for about 1 minute. Place the mixture on a serving dish.
4. To make the lettuce wrap, scoop a large scoop of the chicken mixture onto the lettuce, top with the crushed potato chips and enjoy!
