Ingredients.
2 medium sized potatoes (1 pound)
1.75 t salt
cooking spray
1/2 beaten egg
1.5 AP flour
2 t paprika
1/4 t cayenne
1/8 t garlic powder
1/8 t onion powder
1. Bring a large pot of water to a boil and add 1 t of salt.
2. Meanwhile, use a knife to make 1 cut on each side of the potato to shave some of the skin off.
3. Slice each potato into 1/4 inch slices and then julienne into strips.
4. Transfer the cut potatoes into the boiling water and cook for exactly 3 minutes.
5. Strain the potatoes with a colander and allow the potatoes to cool for about 5 minutes.
6. Meanwhile, spray a small cookie sheet with the cooking spray and set aside.
7. Combine the rest of the ingredients to make a paste. Mix the paste with the potatoes and toss until the potatoes are coated with the seasoning paste.
8. Line the fries up on the cookie sheet, not touching, in a single layer. Lightly mist the tops of the fries with the cooking spray.
9. Bake for 18 - 24 minutes, turning them about half way through, until golden and cooked through.
