Ingredients
Cooking Spray
1.25 c warm water (105 - 115 degrees F)
1 T active dry yeast
1 T sugar
2 3/4 cups + 4 T unbleached flour + additional if needed
3/4 c bread flour
1/2 t salt.
1. Combine the water, yeast and sugar in a bowl and stir until yeast is dissolved.
2. In a food processor or stand mixer, combine the dry ingredients and when the yeast mixture starts to bubble, add it to the bowl. Work the dough until a sticky ball forms.
3. Turn the dough onto a floured surface and knead the dough until it's smooth and elastic. This is an important step to develop the gluten.
4. Place the dough in a bowl sprayed with cooking spray. Cover with plastic wrap and allow the dough to rise for about 1 hour.
5. When ready to make the pizza, gently punch down the dough and roll or pat the dough into a 14" circle.
6. Make sure there's a bare 1/2" border that's about twice the thickness of the middle.
7. With a fork, pierce the dough about 20 times.
8. Top with your favorite sauce, cheese and toppings.
9. Bake in a 400 degree F oven for about 15-20 minutes.
