I made these for a friend's baby shower, which I forgot to take pictures of, but this cupcake was one of the extras that I had left over and I decided to decorate it with sprinkles for my little niece who likes pink and sprinkles.
I got so many compliments on these cupcakes. They are dense, moist and delicious.
Makes 24 cupcakes
Ingredients
1 pint of strawberries. (About 12 oz pureed)
4 eggs
2 c sugar
2/3 c vegetable oil
1 t vanilla extract
3 cups packed AP flour
4 t baking powder
1/2 t salt
6 T instant vanilla pudding powder
Cream Cheese Frosting
1 stick of butter
1-8 oz brick of cream cheese (may use low fat)
powdered sugar
1. Preheat the oven to 325 degrees F. Line the cupcake pans with 24 liners.
2. In a large bowl, beat the eggs, sugar, oil, vanilla, and strawberry puree until well combined.
3. Stir in the dry ingredients.
4. Place the batter in a quart size plastic ziplock bag and snip a small corner off. Use this to squeeze the batter into the cupcakes. Believe me, it will be soooo worth it.
5. Bake for about 23-24 minutes Test done-ness with a toothpick.
6. Frost when the cupcakes have cooled. Instructions for making the cream cheese frosting is in the dessert category.
