Ingredients
2/3 c dark brown sugar
1/4 c cane sugar
9 T butter
1.75 c AP flour
1.5 c oatmeal
1 t baking soda
1/2 t cinnamon
1/2 t vanilla extract
1/3 t salt
2 eggs
6 oz dried cranberries (I used a pack that was infused in blueberry juice)
1/2 c fresh blueberries
5 oz white chocolate chips
1. Preheat the oven to 350 degrees F. In a stand mixer, whip the butter. vanilla extract and sugars together.
2. In another bowl, combine all the dry ingredients. (Leave out the berries and the chocolate chips.)
3. Add the eggs to the first mixture and use the flat paddle to mix for 30 seconds.
4. Slowly incorporate the dry ingredients and mix to make the cookie dough.
5. Using a wooden spoon, carefully stir in the cranberries, blueberries and chocolate chips (be careful not to pop too many blueberries).
6. With an ice cream scoop, place spoonfuls of the dough onto a cookie sheet. You may want to lightly press the cookies because they will not spread too much on their own.
7. Bake for 10-12 minutes or until done.
(Makes about 2 dozen cookies)
