Every week, I ask Steve to request one meal for me to make. This week it was meatloaf. It's been awhile since I've made it, so I decided to make it healthier and tried to create my own recipe. Overall, I'd say the flavor was awesome. One of the best seasoned meatloafs that I've had, but considering I used turkey as half of the meat, the texture of the meatloaf was a bit softer. I'd say this is a keeper. When I baked the meatloaf, I added some seasoned sweet potatoes to the pan and then served everything with some cooked peas. This recipe will serve about 6.
Ingredients
1 cup oatmeal (food processed)
1/4 cup whole wheat bread crumbs
7 baby carrots
1/2 orange bell pepper (you can use whatever color)
2 cloves of garlic
1/2 sweet onion
2 t dried parsley
1/4 t ground mustard
1 pound 93% lean ground turkey
1 pound 96% lean ground beef
1 egg
1/2 cup milk
salt and pepper to taste
1/3 cup ketchup
1/3 cup honey BBQ sauce
Procedure:
Preheat your oven to 340 degrees F.
1. Measure out 1 cup of oatmeal and pulse through the food processor. Combine this with 1/4 cup of the whole wheat bread crumbs in a large bowl.
2. Add the baby carrots and garlic into the food processor to grind up the ingredients. Then, add the softer veggies like the bell pepper and onion. Pulse a few times to chop those up. Be careful not to make a veggie smoothie. Add this mixture to the binding agents (bread crumbs and oatmeal)
3. Add the meats into the mixture and dump in the egg, parsley and mustard at this time. Use your hand or a wooden spoon to combine all the ingredients.
4. I added 1/2 cup of 2% milk. You may want to adjust the amount of milk based on the moistness of the meat mix.
5. Salt and Pepper to taste. Now, for some people, this may be a bit tricky. In my mind, I slice the contents to be salted into 1 inch cross sections and sprinkle a light layer of kosher salt for each layer present. It's probably better to under-salt. You can always put more ketchup on the meatloaf.
6. Give the mixture a final stir and pack it into a loaf pan.
7. Turn the loaf pan over so the meatloaf is sitting in center of a cookie sheet lined with parchment paper. Put a thermometer into the meat at a 45 degree angle, being careful not to touch the bottom of the pan and bake the meatloaf until it reaches 160 degrees.
8. After you put the meatloaf in the oven, mix the ketchup and BBQ sauce together. slather it on the meatloaf once it's been cooking for about 10-15 minutes. (Right about the time you start smelling the goodness coming from the oven)
9. It took about 50 minutes for the meatloaf to cook through to the correct temperature. Enjoy.
