So bread pudding is something you crave once in awhile and don't particularly want it for a while week. So... I made a small portion of it with half of a left over baguette and it turned out wonderfully. Steve and I finished half of it tonight and I imagine we will probably it off tomorrow evening.
This is based off of a Paula Dean recipe. But if you know her, and you know me...something's gotta change. I used 1% milk and fat free condensed milk for the recipe and it turned out just oh so gud.
Ingredients
Half of a stale baguette (4 oz) cut into cubes
1 cup of milk
2 T fat free condensed milk
1/2 t cinnamon
3 T of Kahlua
1/3 c sugar
1/4 c dark brown sugar
2 T cocoa powder
1 t vanilla
1 t almond
2 eggs
3 oz mini chocolate chips
2 T raisins
Procedure
1. Combine the condensed milk, milk and cinnamon and heat the liquid in the microwave for 1:00.
2. In a bowl, beat the eggs and slowly add the sugar to incorporate into the sugar. Add the Kahlua, cocoa powder, vanilla and almond and whisk until smooth.
3. Spray a small baking dish or a oven safe bowl with cooking spray.
4. Pour the cubed bread, raisins, and chocolate chips into the bowl and mix to even distribute everything.
5. Pour the liquid mixture over the bread mixture and allow the mixture to soak into the bread for at least 20 minutes. You may want to put into the fridge for a couple hours and stir once after about 5 minutes.
6. Heat the oven up to 325 (I used my toaster oven) and bake for about 30 minutes.
