This kind of reminds me of the cobbler that the Salt Lick makes. You can use any fruit to make this cobbler, although my favorites are blackberry, blueberry, or cherry. The one pictured was made with blackberries and blueberries.
Ingredients
1 stick of butter (1/2 cup)
1 cup of flour (I used 3/4 AP, and 1/4 cornmeal)
1 cup of sugar
1 cup of milk
1 t baking powder
1/2 t almond extract
2 cups of fruit
3/4 cup sugar
1 T AP flour
1. Preheat the oven to 350 degrees. I used an 8x6 glass baking dish, but you can use whatever small pan you have. While the oven is heating up, put the stick of butter into the dish and place the dish into the oven so that the butter melts.
2. While the butter is melting, combine the flour, 1 cup of sugar, milk, almond extract, and baking powder in a mixing bowl. Once the butter is melted, pour the batter into the dish. (Don't rinse out the bowl)
3. Add the fruit, sugar and flour into the bowl and stir so that the fruit is evenly coated with the sugar and flour. (You may want to add more or less sugar, depending on the sweetness of your fruit)
4. Pour the fruit mixture into the batter and bake for about 45 minutes.
5. Enjoy.
